Blueberry Ginger Cooler

This mocktail takes on the ~cooler~ shades of summer while keeping things light and refreshing. You can match the moody vibes with the Pinky Promise Anklet and can check out the full recipe on Cook with Manali!
Ingredients
1 liter water
1.25 cups fresh blueberries
1 heaping tablespoon grated ginger
4-5 tablespoons sugar or adjust to taste
2-3 cans of lemon lime sparkling water unsweetened
ice cubes
mint leaves
Instructions
To a pan on medium-high heat add water, blueberries and grated ginger. Let it all come to a boil.
Once the mixture starts boiling, add sugar and mix till it dissolves.
Now lower the heat and using the back of your spatula, mash the blueberries. Mash all of it and let the mixture simmer for another 10-15 minutes.
Remove from heat and once the syrup has cooled down, cover it with a cling sheet and let it sit at room temperature for 2-3 hours. This is important so that the flavors mix-in well.
After 2-3 hours, strain the syrup into a clear bowl. At this point you can cover and keep it refrigerate until ready to use.
To serve the blueberry ginger cooler, fill 2/3 of the glass with the syrup, add ice cubes.
And then add lemon-lime sparkling water on top and stir so that the soda and syrup combine well.
Garnish with some fresh blueberries and mint leaves and enjoy!

INGREDIENTS:
For the Toasted Marshmallow Simple Syrup
1 cup water
9 marshmallows toasted
1/4 cup maple syrup
1 tbsp vanilla
For the S’Mores Drink
4 oz Ritual Whiskey Alternative
4 oz Toasted Marshmallow Simple Syrup
1 oz Oat Milk or milk of choice
Optional Garnishes
1/2 cup gluten free graham cracker crumbs
Chocolate sauce for drizzling
INSTRUCTIONS
Prepare the toasted marshmallow simple syrup:
In a small sauce pan over medium high heat, bring water to a boil.
While water boils, line a baking sheet with tin foil + grease it. Arrange 9 marshmallows on the baking sheet + broil in the toaster oven (preferably) for 3-5 minutes or until the tops are golden brown. Watch closely so they do not burn.
While marshmallows are toasting, add maple syrup to the boiling water and whisk.
Once marshmallows are toasted, spray a silicone spatula with your favorite pan spray + remove mallows from baking sheet. Reduce heat to low and add 3 marshmallows at a time to boiling water, whisking until dissolved. Be careful not to add more than this at once as the mallows can puff up and overflow when they hit the hot liquid.
After all marshmallows are dissolved, add 1 tbsp of vanilla and whisk.
Transfer to a heat proof container with a lid + store in the fridge up to one month. Ensure syrup is fully cooled before using.
Prepare the S’Mores Drink:
Drizzle chocolate inside of your glass as well as along the rim of the glass.
Dip the rim of the glass into graham cracker crumbs, rolling it from side to side along the rim to ensure the entire rim is fully coated with graham cracker crumbs. Store glass in the fridge to set chocolate while you mix the drink.
In a cocktail shaker with ice, add Ritual Whiskey Alternative, toasted marshmallow simple syrup and oat milk. Shake vigorously to combine.
Strain into chilled glasses and enjoy!
